  • Irish Beef Stew With Guinness Stout

    Ingredients

    • 2 Tbsp. extra virgin olive oil
    • 3 x bay leaves
    • 2 lb beef stew meat with some fat, cut in 2 in cubes
    • 1 lrg yellow onion, peel, slice 1/4 in
    • 2 clv garlic, peel, chop
    • 1 tsp dry thyme, whole
    • 1 tsp dry rosemary
    • 3 Tbsp. all-purpose flour
    • 3/4 c. beef stock
    • 1/2 c. Guinness stout
    • 1 Tbsp. minced parsley
    • 1/2 lb carrots, sliced salt and fresh black pepper, to taste

    Directions

    1. Heat a 6-qt stove-top casserole and add in the oil and the bay leaves.
    2. Cook the bay leaves for a moment and then add in the meat. Brown the meat on both sides on high heat. Add in the sliced onion and cook for a few min till it is clear. Reduce the heat to low and add in the garlic, thyme, rosemary and flour, and stir well till smooth. Add in the beef stock and stout; simmer, stirring, till the stew thickens a bit. Add in the remaining ingredients and cover. Place the pot in a 275 F oven for about 2 hrs, stirring a couple of times. Check for salt and pepper before serving.
    3. Tracy's Notes: Very good. I added boiled potatoes at the end. I'll make it again; but it was kind of expensive I paid $8 for the stew beef and $7 for a 6-pack of guinness so I probably will not make it often. . .
    4. Yield: 4-6 servings
