  • Beef Stew With Sweet Potatoes

    Ingredients

    • 1 1/2 lb lean stew beef
    • 3 Tbsp. flour
    • 1/4 tsp salt
    • 1/4 tsp freshly-grnd black pepper
    • 1 lrg onion - (or possibly 2 medium) halved, and cut into 1/4" slices
    • 1 Tbsp. vegetable oil
    • 1 lrg sweet potato cut in 1 1/2" cubes
    • 1/2 c. beef stock (canned or possibly from bouillon or possibly base)
    • 1/4 tsp cinnamon - (to 1/2 tspn)
    • 1/2 c. frzn peas or possibly green beans - (to 1 c.) thawed Salt to taste Freshly-grnd black pepper to taste

    Directions

    1. Toss stew beef with the flour and 1/4 tsp. each salt and pepper. Heat vegetable oil in a large skillet; brown beef and onion.
    2. Place sweet potato cubes in the crock pot; add in beef and onions. Mix beef broth with cinnamon and pour over beef mix. Cover and cook on LOW 8 to 10 hrs.
    3. Add in peas or possibly green beans during the last 15 to 20 min. Good with biscuits.
    4. This recipe yields 4 servings.

      I'm not sure sweet potatoes and beef are the best combination. I think sweet potatoes are better with lamb but I didn't have lamb so that's when I found this recipe. Sweet potatoes cook fast so they got too mushy. Next time I won't saute them first and will definitely not put them on the bottom of the crock pot. The cinnamon was a nice touch. I think I will make adjustments for next time and use lamb.
