Sweet And Sour Chicken Dinner
Ingredients
- 6 med carrots cut 1/2" chunks
- 1/2 c. finely-minced green pepper
- 1/2 c. finely-minced onion
- 3 x chicken breasts cut lengthwise
- 1/2 tsp salt
- 1 jar sweet and sour sauce - (10 ounce)
- 1 can pineapple chunks - (15 1/2 ounce) liquid removed
- 3 Tbsp. cornstarch
- 3 Tbsp. cool water
- Warm cooked rice
Directions
- In a crockery cooker, place carrots, green pepper and onion. Top with chicken breasts. Sprinkle with salt. Pour sweet-and-sour sauce and pineapple chunks over all. Cover. Cook on LOW 7 to 8 hrs or possibly HIGH 3 1/2 to 4 hrs.
- Remove chicken, keeping it hot. Blend cornstarch and water, stir into juices in crockpot. Cover; cook on HIGH 10 to 15 min or possibly till thickened. Season to taste and serve over rice.
- This recipe yields 6 servings.
