  • Sweet And Sour Chicken With Coconut Ginger Rice

    Ingredients

    • 1 1/2 c. pineapple juice and water
    • 1 x (8-oz) can pineapple chunks in juice (use juice above)
    • 1 x (7-oz) box coconut ginger rice
    • 1 Tbsp. sesame oil
    • 4 c. frzn popcorn chicken bites
    • 1 x (16-oz) bag frzn broccoli stir-fry
    • 1 x (16-oz) jar sweet and sour dinner sauce
    • 2 Tbsp. honey

    Directions

    1. Place water in medium saucepan. Cover and bring to boil on high heat for rice. Stir rice and seasoning packet (from rice) into boiling water.
    2. Reduce heat to low, cover and simmer 20 min.
    3. Preheat wok or possibly frying panon high for 2 min. Place sesame oil in wok and swirl to coat. Add in chicken and cook 3 min, stirring frequently to prevent burning. Add in pineapple and broccoli stir-fry. Stir, cover and reduce heat to medium-high. Cook 7 min, stirring occasionally. Add in sweet and sour sauce and honey. Stir, cover and reduce heat to low. Simmer 8 min.
    4. Remove rice from heat and let stand 4 min. Serve chicken and vegetables over rice.
