Super Chicken Salad

Alternatively, you can cook the chicken breasts in a skillet, dice, and chill - but I really like the flavor that grilled adds to the salad. Ingredients
- 2 boneless,skinless grilled chicken breasts, diced
- 1/8 cup raisins
- 1/8 cup dried cranberries
- 1/8 cup chopped celery
- 1/8 cup diced apple
- 3 tbsp mayo or miracle whip
- 1 tbsp mustard
- salt & pepper to taste
- 1 head of romaine, green leaf, or red leaf lettuce, shredded
- 1 carrot, grated
- 1 bell pepper, sliced finely
- 1 tomato, chopped
- optional, croutons
Directions
- Combine the first 8 ingredients to make the chicken salad.
- Serve on a bed of shredded lettuce.
- Top with carrot, bell pepper, and tomato.
