    Sunday Supper Turkey Pot Pie

    Easy prep recipe made with your choice of dough topping and leftover turkey (or chicken).

    Ingredients

    • 1 cup chopped, cooked turkey
    • 1 tsp. garlic powder
    • 2 tbs. butter
    • 1 tbs. oil
    • 1/2 cup chopped onion
    • 1 stalk celery, chopped
    • 1/4 cup flour
    • 3/4 cup milk
    • few pinches dry thyme
    • 1/2 cup frozen peas and carrots, thawed
    • 1-2 tbs. fresh parsley, chopped
    • chicken broth
    • salt and pepper
    • topping: phyllo dough cut slighty smaller than the top of a 9x9 baking dish, or refrigerated flaky dinner rolls or biscuits, or pie dough cut to fit top of pan, as it will shrink a bit
    • paprika

    Directions

    1. Heat oven to 375 F.
    2. Heat 1 tbs. butter with the tbs. oil.
    3. Saute the onions and celery.
    4. Add another tbs. butter, then stir in the flour.
    5. Slowly add the milk.
    6. When thickened, add the other veggies, parsley, thyme, salt and pepper. If mixture is too thick, add a bit of broth.
    7. Pour the mix into the baking dish.
    8. Top with dough of choice.
    9. Bake 20-30 minutes.
