  • STUFFED MUSHROOMS IN MICROWAVE-INDIAN STYLE

    This can be served on its own or with bread and soup which can make a very fine meal in itself.It is also very healthy and quite filling too.You can alter the spice to suit your taste.

    Ingredients

    • .100 Gms grated ricotta cheese
    • Button white mushrooms-about 15-20,or as and how much you need
    • butter-50 gm
    • 1/2 tsp salt
    • WHITE PEPPER POWDER-1/4 TSP
    • 1/2 tsp coriander powder
    • 1/4 tsp cumin powder
    • 1/4 tsp fennel powder
    • 1/4 tsp red chili powder-mild
    • 1 tsp garlic paste
    • 2 tsp tomato paste or ketchup or sauce
    • finely chopped parsley or coriander to garnish

    Directions

    1. put half the butter in a microwave safe bowl.melt it for 15 secs
    2. fry garlic and cook for 1/2 minute in the microwave
    3. add cheese,salt,chilli and pepper powders and the spice powders and mix well.now add the tomato sauce and give it a good mix.
    4. cook all the ingredients for 1 minute.stir once.Chop off the upper portion of the button mushrooms and stuff this cheese mixture.
    5. In a large wide microweave safe bowl,first ad the remaining butter.
    6. Place each stuffed mushroom in the bowl and sprinkle the remaining chese mixture and sprinkle 2 tbsp water and cook for 3 minutes,uncovered.
    7. Garnish with chopped parsley and serve with soup and some bread rolls on the side.
