Stuffed Green Peppers (crockpot)

- 4 medium fresh green peppers
- 1 lb lean ground beef
- 2 cups instant brown rice
- 2 cups V8 low sodium vegetable juice
- 2 (14.5 oz) cans sliced stewed tomatoes
Directions
- spray slow cooker with nonfat cooking spray
- cut tops off of peppers and clean out the inside
- In a large bowl, mix beef, rice, and vegetable juice
- Stuff 1/4 of the mixture into each pepper
- Place peppers in crockpot
- Cover peppers with stewed tomatoes
- Cook on High for 4 hours or Low 8 to 9 hours
