  • Crockpot Stuffed Green Peppers

    Ingredients

    • 6 sm Green peppers, tops removed and seeded
    • 1/2 tsp Salt
    • 1/4 c. Catsup
    • 1 lb Grnd ham or possibly grnd chuck
    • 1 c. Catsup
    • 1/2 c. Water
    • 1/2 c. Raw rice (converted)
    • 4 x Carrots, peeled and cut in 3-inch pcs
    • 2/3 c. Water
    • 1/2 c. Minced onion

    Directions

    1. Wash green peppers; drain well. Salt cavity lightly. Combine in medium bowl the grnd ham, rice, 2/3 c. water, onion, salt and catsup. Mix well.
    2. Stuff green peppers 2/3 full. Arrange stuffed peppers in CROCK-POT (may be stacked) with carrot pcs to help support peppers. Pour in catsup and 1/2 c. water. Cover and cook on Low 6 to 8 hrs. (High: 3 to 4 hrs) Serve on a bed of rice and pour tomato sauce over top.
