Stuffed Fish Fillets

- 12 fillets (Basa-Sole-Flounder)
- 1 Cup crab meat- chopped
- 2 Tsp mince parsley
- 2 Tsp minced garlic
- 24 Ritz crackers (or any buttery type cracker)
- 1/4 Cup Parmesan cheese
- 1/2 Cup butter
- 1 Large white onion chopped
Directions
- I heavy skillet, melt butter, add onions, parsley and garlic and saute.
- Add crab meat and warm.
- Take off heat and blend in crackers and Parmesan cheese
- Get fillets and lay them flat, spread mixture on each filet and roll them up, securing with a tooth pick.
- Lay each filled fillet in a 9 X 13 baking dish and dot with a little butter (1/4 cup) and a squeeze of lemon juice
- Cover with aluminum foil and bake at 375 for 12 minutes
- Delicious
