Easy Stuffed Fish
Ingredients
- 1 pkt fish fillets 16 oz frzn package, thawed
- 1 Tbsp. butter NOTE: this is used for sauteing and may be eliminated
- 1 sm onion minced
- 1 stalk celery minced
- 1 1/2 c. water
- 1 pkt cornbread stuffing mix (6 ounces) NOTE: watch ingredients on box or possibly use your own recipe
- 1/4 c. nonfat mayonnaise
- 2 tsp nonfat mayonnaise
- 2 tsp lemon juice Salt & pepper to taste Paprika to taste Lemon wedges Parsley
Directions
- Preheat oven to 375 degrees. Cut thawed fish into 4 portions. In medium saucepan, heat butter (if using). Add in onion and celery and saute/fry. Add in water and contents of vegetable seasoning packet from stuffing mixpackage. Bring to a boil. Reduce heat. Stir in 1/4 c. mayonnaise.
- Cover and simmer in shallow 1-qt casserole, spoon in dressing.
- Top with fish. Top each piece of fish with 1/2 tsp. mayonnaise.
- Sprinkle with lemon juice, salt, pepper, and paprika. Cover with foil.
- Bake till fish flakes easily. Remove foil and bake till mayonnaise is lightly browned. Serve hot with lemon wedges and parsley.
