  • Easy Stuffed Fish

    Ingredients

    • 1 pkt fish fillets 16 oz frzn package, thawed
    • 1 Tbsp. butter NOTE: this is used for sauteing and may be eliminated
    • 1 sm onion minced
    • 1 stalk celery minced
    • 1 1/2 c. water
    • 1 pkt cornbread stuffing mix (6 ounces) NOTE: watch ingredients on box or possibly use your own recipe
    • 1/4 c. nonfat mayonnaise
    • 2 tsp nonfat mayonnaise
    • 2 tsp lemon juice Salt & pepper to taste Paprika to taste Lemon wedges Parsley

    Directions

    1. Preheat oven to 375 degrees. Cut thawed fish into 4 portions. In medium saucepan, heat butter (if using). Add in onion and celery and saute/fry. Add in water and contents of vegetable seasoning packet from stuffing mixpackage. Bring to a boil. Reduce heat. Stir in 1/4 c. mayonnaise.
    2. Cover and simmer in shallow 1-qt casserole, spoon in dressing.
    3. Top with fish. Top each piece of fish with 1/2 tsp. mayonnaise.
    4. Sprinkle with lemon juice, salt, pepper, and paprika. Cover with foil.
    5. Bake till fish flakes easily. Remove foil and bake till mayonnaise is lightly browned. Serve hot with lemon wedges and parsley.
