Stir-Fry on the Fly and Pork Wontons

In honor of the Chinese F1 Grand Prix, I was instructed by my fiance to cook some Chinese-esque cuisine. Unfortunately, the nite before was a friend's wedding, so I wasn't exactly in the best shape to cook. After waking up a bit, I decided on the following:

    Directions:

In a wok or large saute pan, heat oil, add garlic and onions. Once they begin to pop - add ground pork. Once pork is cooked thoroughly - add veggies. You could add the ones above or any combination of what you like. I think broccoli and mushrooms would work well in this. Cook veggies until they are al dente. Our mixture into large serving bowl.

In a separate bowl, mix together ingredients for the sauce (use a whisk)and then pour over stir fry mix. Top with garnishes and serve with steamed rice.

Add salt and pepper to taste - however there should be enough salt from the sauce.

    Pork and Veggie Won Tons

1 package of won ton wrappers

    1/4 lb. of ground pork

    2 stalks of celery

    1 handful of cilantro

    1 clove of garlic

    1 scallion

    Directions:

Cook ground pork in pan and once cooked - put in the food processor. Add celery, cilantro, garlic and scallion to food processor and pulse until smooth. Place a little less than a tablespoon of the mixture on one won ton wrapper, and follow directions on the package as to how to form them. Then in a non-stick pan, sprayed w/ cooking spray, cook won-ton until browned on both sides.

I served these with a simple peanut sauce of - peanut butter, soy sauce, water, black sesame seeds, and scallions.

I would have to say all in all - the stir fry was excellent and I was pleasantly surprised with how the won tons came out considering I was slightly hung over.

Oh and I came across an excellent drink in Food and Wine magazine called Redhead in Bed -

3 pounds strawberries, hulled and coarsely chopped

    2/3 cup sugar ( ( I used splenda)

1/2 cup plus 2 tablespoons citrus vodka ( didn't have citrus vodka, but didn't miss it)

    1/4 cup fresh lime juice

    Ice

    1/3 cup chilled Riesling

    Directions:

    1. In a bowl, toss the strawberries with the sugar and let stand, stirring occasionally, until the strawberries release their juices, about 10 minutes.

    2. In a blender, combine half each of the strawberries and their juices, the vodka and lime juice with 1 cup of ice and puree. Pour into a pitcher. Repeat with the remaining strawberries and juices, vodka and lime juice and 1 more cup of ice. Fill 10 collins glasses halfway with ice. Pour the cocktail into the glasses, top each with about 1/2 tablespoon of Riesling and serve.

This drink was amazing!!! Fresh and is perfect for a hot summer day.
