    I made this cake in advance of St. Patick's Day to test if it would be worthy of that occassion. I was a little bit skeptical given the packaged ingredients, but it turned out wonderfully. Our dinner guests and our kids both loved it! When sliced, the inside of the cake has a nice green tint to it which is not visible in the photos I took but which makes it appropriate for St. Paddy's Day. If you want to be strengthen the connection, you could add a few drops of green food coloring to the glaze.

    Ingredients

    • 1 pkg (18 ounces) yellow cake mix
    • 2 pkgs (3.4 ounces each) instant pistachio pudding mix
    • 1 cup water
    • 4 eggs
    • 3/4 cup vegetable oil
    • GLAZE:
    • 1 cup confectioners' sugar
    • 1 Tbs butter, melted
    • 1 1/2 Tbs milk

    Directions

    1. Pre-heat oven to 350 F.
    2. In a large bowl, combine the cake pudding mixes, water, eggs and oil. Beat on low speed for 30 seconds and then on medium for 2 minutes.
    3. Pour into a greased and floured 10-in. fluted tube pan. Bake for 60-70 minutes, until a toothpick inserted near the center comes out clean. Cool for 10 minutes in the pan, then remove from pan to a wire rack to cool completely.
    4. In small bowl, combine the glaze ingredients and stir to reach a desired consistency. Add more milk if needed. Drizzle over cake.

      I wasn't expecting to enjoy this dessert half as much as I did. The cake itself is extremely moist and really tasty. I do love pistachios! I'd recommend you try this for St. Paddy's Day if you don't have a dessert planned.

        Nancy just made this Bundt cake for me and my family. It's not St. Patrick's day yet (is it?), but Nancy is the kindest person on earth, and I have Bundt cake to prove it.

        I need to set the record straign - that this cake should not just be made for St. Patrick's Day. It should be made for anyone you want to make happy. It is possibly the Best Cake I've ever had. Sweet, and moist, but not too, and perfect consistency, and simple.

        I'm spending the rest of my day trying to wait for my family to share it with. Even Nancy had to tell me to not eat it all before my kids get home. I'm trying Nancy... (and thank you)

          This is a delicious cake and good for ANY occasion. My kids love it so much they request it for birthday and non holidays as well. :o) So easy to make.

            In my oven and bundt pan this cake cooked in less than an hour so keep an eye on it. Also, I sifted my powdered sugar because it was really lumpy and this helped keep the glaze smooth.

              I make this every year and love it, it's perfect for the day and who doesnt love this moist awesome cake you made me remember I need to get everything for it.. I also use cool whip and instant pudding for the frosting with lots more nuts.... love it!
