Spicy Pork Ribs
These Korean style pork ribs are braised with a sweet and spicy sauce. Ingredients
- 6-8 boneless pork ribs
- 2 Tbs sesame oil
- salt and pepper
- For the sauce:
- 2 cups chicken stock
- 1 (1 inch) ginger piece, minced
- 2 garlic cloves, minced
- 1 cup chili paste
- 3 Tbs soy sauce
- 1/2 cup corn syrup
- 1/4 cup brown sugar
- 1 tsp black pepper
- 1 Tbs sesame oil
Directions
- Preheat oven to 375 degrees F.
- In a medium skillet, add 2 Tbs of sesame oil and preheat it over medium high heat. Season both sides of the boneless pork ribs with salt and pepper. Cook ribs for a few minutes on each side until golden brown and crispy. Do not cook all the way through, just sear the outside.
- In a mixing bowl, combine all the ingredients for the sauce.
- Place ribs evenly in the bottom of dutch oven, pour sauce over top of ribs. Cover and bake for 3 hours. Check periodically to make sure the sauce isn't reducing too much.
- Allow to cool slightly and serve with rice.
