These Korean style pork ribs are braised with a sweet and spicy sauce.

    Ingredients

    • 6-8 boneless pork ribs
    • 2 Tbs sesame oil
    • salt and pepper
    • For the sauce:
    • 2 cups chicken stock
    • 1 (1 inch) ginger piece, minced
    • 2 garlic cloves, minced
    • 1 cup chili paste
    • 3 Tbs soy sauce
    • 1/2 cup corn syrup
    • 1/4 cup brown sugar
    • 1 tsp black pepper
    • 1 Tbs sesame oil

    Directions

    1. Preheat oven to 375 degrees F.
    2. In a medium skillet, add 2 Tbs of sesame oil and preheat it over medium high heat. Season both sides of the boneless pork ribs with salt and pepper. Cook ribs for a few minutes on each side until golden brown and crispy. Do not cook all the way through, just sear the outside.
    3. In a mixing bowl, combine all the ingredients for the sauce.
    4. Place ribs evenly in the bottom of dutch oven, pour sauce over top of ribs. Cover and bake for 3 hours. Check periodically to make sure the sauce isn't reducing too much.
    5. Allow to cool slightly and serve with rice.
