Spiced Pumpkin Pancakes
Not sure what to do with your extra canned pumpkin? Make pancakes! Ingredients
- Whisk in a medium bowl:
- 1 ¼ cups all-purpose flour
- 2 Tbsp sugar
- 2 tsp baking powder
- 1/8 tsp nutmeg
- ½ tsp of each: cinnamon, ground ginger, and salt
- Pinch of ground clove
- In a separate bowl stir together:
- 6 Tbsp pumpkin or sweet potato puree (canned is easy)
- 1 cup of milk
- 2 Tbsp melted butter
- 1 egg
Directions
- Fold wet mixture into dry ingredients. Melt butter in a skillet over medium heat.
- Pour batter for each pancake and cook about 3 minutes per side.
- Serve with butter & syrup, powdered sugar, cinnamon or whipped cream. Makes 1 dozen large pancakes or 2 dozen silver dollar size small pancakes.
