  • Spiced Pumpkin Pancakes

    Not sure what to do with your extra canned pumpkin? Make pancakes!

    Ingredients

    • Whisk in a medium bowl:
    • 1 ¼ cups all-purpose flour
    • 2 Tbsp sugar
    • 2 tsp baking powder
    • 1/8 tsp nutmeg
    • ½ tsp of each: cinnamon, ground ginger, and salt
    • Pinch of ground clove
    • In a separate bowl stir together:
    • 6 Tbsp pumpkin or sweet potato puree (canned is easy)
    • 1 cup of milk
    • 2 Tbsp melted butter
    • 1 egg

    Directions

    1. Fold wet mixture into dry ingredients. Melt butter in a skillet over medium heat.
    2. Pour batter for each pancake and cook about 3 minutes per side.
    3. Serve with butter & syrup, powdered sugar, cinnamon or whipped cream. Makes 1 dozen large pancakes or 2 dozen silver dollar size small pancakes.
