  • Spiced Pumpkin Bread With Orange Cream Cheese

    Ingredients

    • 1/3 c. Butter or possibly margarine, softened
    • 1 1/4 c. Sugar
    • 1 c. Sold pack pumpkin
    • 1 x Egg
    • 1 3/4 c. All-purpose flour
    • 1 tsp Pumpkin pie spice
    • 1/2 tsp Baking soda
    • 1/2 tsp Salt
    • 1/2 tsp Grnd cinnamon
    • 1/4 tsp Baking pwdr
    • 1/2 c. Dry currants
    • 1/2 c. Minced pecans
    • 1 pkt (8 ounce) cream cheese, softened
    • 3 Tbsp. Sugar
    • 2 tsp Vanilla extract
    • 1 tsp Grated orange peel
    • 1 tsp Lowfat milk, (up to 2 tsp.)

    Directions

    1. Using an electric mixer, beat butter and sugar till light; add in pumpkin and egg, mixing well. In a medium bowl, combine flour, pumpkin pie spice, baking soda, salt, cinnamon and baking pwdr; gradually add in to butter mix, mixing till well blended. Stir in currants and pecans.
    2. Pour batter into a greased 8x4-inch loaf pan. Bake at 350 F for 1 to 1 1/4 hrs our till a wooden toothpic inserted in the center comes out clean.
    3. Cold in pan on wire rack 15 min. Remove from pan; cold completely on wire rack. Serve with Orange Cream Cheese.
    4. To make Orange Cream Cheese: In a medium bowl, combine all ingredients except lowfat milk. Stir till smooth. Stir in 1 to 2 tsp. lowfat milk to make spreading consistency.
    5. For holiday gift giving, place wrapped bread in a decorative basket along with a container of Orange Cream Cheese.
