Southwestern Cheese Soup
Ingredients
- 1 c skim milk
- 16 oz fat free Velveeta
- 1 can whole kernel corn, drained
- 1 can black beans, drained and rinsed
- 1 can Rotel, undrained
- 1/2 lb chorizo
Directions
- Mix all ingredients except chorizo in Dutch oven.
- Cook over medium-low heat, stirring frequently, until cheese is melted and soup is hot.
- Brown chorizo and stir into soup.
