Smothered Cabbage and Potatoes
If you like cabbage, you'll love this dish. It is really good in winter time. Ingredients
- 2 Tbsp olive oil
- 1 medium onion cut in med size chunks
- ½ lb sausage or ham or pickled meat, sliced
- 1 med to large cabbage cut in small chunks
- 4 med potatoes, quartered
- 1 Tbsp Cajun seasoning
- ¼ tsp celery seed
- ½ tsp seasoned vinegar
- 1 Tbsp sugar
- ¾ c hot water
- 1 Tbsp flour
Directions
- On med-high, heat oil in large pot.
- Add onions and sauté for 5 minutes.
- Stir in meat and cook for 5 minutes.
- Stir in potatoes and seasonings. Cover and cook 10 minutes on med-low heat, stirring occasionally.
- Stir cabbage in gently and cook covered on low heat for 15 minutes, stirring occasionally. NOTE: It may be difficult to stir in cabbage at first but as it cooks down it will stir easily.
- Stir in vinegar and sugar.
- Add flour to water and stir until flour is dissolved.
- Turn fire up to medium and pour in flour mixture, stirring well.
- Cook and stir gently for 3-5 minutes until flour mix has thickened slightly.
