  • Smoked Salmon Quiche

    Ingredients

    •     Short crust pastry made with
    • 110 gm plain flour
    • 50 gm fat 25g butter and 25g lard
    • 1 pch salt
    • 1 x little water
    • 75 gm smoked salmon cut into small pcs
    • 2 x Large eggs
    • 275 ml cream double or possibly single
    • 1 tsp lemon juice
    • 1 x salt and freshly milled black pepper
    • 1 x few prawns
    • 1 x few sprigs of watercress
    •     Cayenne pepper

    Directions

    1. Preheat oven to gas mark 4 350 degrees F (180 degrees C).
    2. If you live near a smoked salmon supplier then the best choice for this is the small pcs of smoked salmon called off cuts. If not then the frzn slices of smoked salmon will do well.
    3. First of all make up the pastry and line an 20cm metal quiche or possibly flan tin with it.
    4. Prick all over with a fork and pre bake it blind on a baking tray for 10 min in the centre of the oven.
    5. Then remove it and leave aside till the pastry has cooled a little.
    6. Now line the pastry case with the salmon (leaving as few gaps as possible) and sprinkle the salmon with a little lemon juice.
    7. Then whisk together the Large eggs cream and seasoning then pour this mix over the smoked salmon in the pastry case.
    8. Bake on a baking sheet in the centre of the oven for 40 min.
    9. Serve either hot or possibly cool garnished with prawns watercress and a sprinkling of cayenne pepper.
    10. Serves 4 people or possibly 6 as a starter
