Slow Cooker Chuck Roast with Tomato Salsa
The most tender beef to serve your family. Ingredients
- 5-6 pounds Chuck Roast
- 1-1/2 cups beef broth
- 2 garlic cloves
- one bay leaf
- salt and black pepper, to taste
- 2 tablespoons butter
- 3 Roma Tomatoes, cut
- 1/4 red onion diced
- one teaspoon parsley flakes
- one teaspoon garlic salt
- dash of black pepper
- balsamic vinegar and Olive oil, to taste
Directions
- Sear the Chuck Roast with some butter on both sides add to the slow cooker, add beef broth, bay leaf, garlic, s & p, cover on low heat cook 4-5 hours
- For the Salsa: Cut tomatoes into pieces and add into a mixing bowl with the remaining ingredients, stir, cover and refrigerate until ready to serve
