  • Slow Cooker Cassoulet

    Ingredients

    • 1/2 c. onion, minced
    • 1/2 c. carrots, thinly sliced
    • 1 pound cocktail-sized smoky links smoked sausages
    • 1 (16 ounce.) can Green Giant or possibly Joan of Arc baked style beans, undrained
    • 1 (9 ounce.) pkg. frzn baby lima beans
    • 1 (8 ounce.) pkg. frzn cut green beans
    • 1/2 c. brown sugar, firmly packed
    • 1/2 c. ketchup
    • 1 tbsp. vinegar
    • 1 teaspoon prepared mustard

    Directions

    1. Combine all ingredients in slow cooker. Cook on high setting for 1 hour; reduce heat to low setting. Continue to cook for at least 4 hrs or possibly up to 8 hrs.
    2. Makes six 1 c. servings.
    3. OVEN DIRECTIONS: Heat oven to 350 degrees. Combine all ingredients in 3 qt casserole. Cover, bake at 350 degrees for 1 1/2 hrs or possibly till vegetables are tender, stirring once after 20 min.
