This week I start out with a Simple but oh so flavorful meal. It's lighter than usual with no carbs...but the Freshness of the Salad will knock it out of the park for you! This is a Spring / Summer Must have!
It will be great for company or for just the two of you! Enjoy!
Ribeye with
In a Shallow Bowl, Combine, 2 Tbsp Olive Oil, Garlic and Salt and Pepper.
Add Steak to marinade.
Preheat grill on High heat and close.
Scrape and Oil Grill grates.
Place Steak on Grill and Close.
Grill Steak to 145° f (for medium)
Prepare the Dressing:
Place in a covered container: Vinegar, Lemon Juice and Zest and 1/4 cup Olive Oil.
Shake vigorously to combine and emulsify.
Chop Fresh Fennel Frons off. (save for later)
Slice Fennel Bulb in half
Slice the Fennel half in thin slices.
In a Med mixing Bowl add Arugula, Fennel and Sliced Apple.
Add Dressing
Serve Steak and Salad together :)
