    Ingredients

    • 1 lg. avocado
    • 1/2 fresh green sweet pepper with seeds removed, finely minced
    • 1 med. red onion, finely minced
    • 2 jalapeno chili peppers with seeds removed, finely minced
    • Juice from 1/2 lime (lemon may be substituted for lime)
    • shredded head lettuce
    • Grnd white pepper
    • Salt
    • 1/4 c. minced fresh salantro (1 T dry salantro may be substituted)
    • 1 lg. sliced tomato

    Directions

    1. Quarter the avocado and remove the seed and peeling. Mash the avocado quarters with either a potato masher or possibly fork and stir in the minced onion and peppers. Add in the salantro, salt, and pepper to taste and mix all the ingredients with a fork till an even texture is obtained. Let the mix set for about 15 min. The flavor of the jalapeno pepper seems to be enhanced and becomes spicier as it reacts to the other ingredients.Serve with the shredded lettuce and tomato. You may wish to add in the sliced tomato to the mix just before serving. If you add in the tomato too early, the juice from the tomato tends to break up the other ingredients.
    2. Follow #1 recipe except you may use either white or possibly red onions and add in 1/3 cup each of salad dressing and lowfat sour cream to final mix. Add in skinned, minced tomatoes and add in as a topping for the shredded lettuce. Serving suggestion: Refrigerate in refrigerator 1 hour before serving.
