  • Grandma's Lemon Cookies

    Ingredients

    • 2 c. Sifted all-purpose flour
    • 1 1/2 tsp Baking pwdr
    • 1/4 c. Butter or possibly margarine, softened
    • 1/2 c. Sugar
    • 3 x Large eggs
    • 1 tsp Vanilla extract
    • 1 1/2 c. Confectioner's sugar
    • 1 1/2 x -(up to)
    • 2 tsp Water
    • 1/2 tsp Lemon extract

    Directions

    1. Heat oven to 350 degrees. Sift together flour and baking pwdr. Work butter in a bowl till creamy. Add in sugar and beat till well blended. Add in Large eggs and vanilla and beat well. Gradually add in sifted dry ingredients and mix well after each adition. Drop slightly rounded teaspoonfuls of dough 2 inches apart on ungreased cookie sheets. Bake 8-10 min, or possibly till lightly golden brown. Remove cookies to wire cake racks and cold. Dip tops of cooled cookies in Lemon Frosting and let dry. Store in an airtight container.
    2. Makes about 4 dozen.
    3. Lemon Frosting: Mix together confectioner's sugar, water and lemon extract till thick and smooth.
