    Seasoned Potato & Egg Skillet Bake

    An absolutely scrumptious lunch, breakfast/brunch/supper one pan dish.

    Ingredients

    • 6 Large Eggs
    • 16 ounces Frozen Hash Brown Potatoes (or you can use fresh potatoes of your choice, peeled and diced)
    • 1 tablespoon smoked paprika
    • 1 teaspoon cumin
    • Salt and Black Pepper, to taste
    • Drizzling of Good Olive Oil
    • Optional: Freshly grated cheese for garnishing

    Directions

    1. Pre heat Oven 425 F
    2. In a 10" cast iron skillet add potatoes, seasoning, olive oil, cover with aluminum foil and place into the hot oven and bake 20 minutes, remove from oven, make wells with a large spoon and crack an egg in each well, return to oven and bake 6 minutes longer (until eggs set up and cook to your liking).
    3. Plate and serve.
    4. Enjoy!
