Seasoned Potato & Egg Skillet Bake
An absolutely scrumptious lunch, breakfast/brunch/supper one pan dish. Ingredients
- 6 Large Eggs
- 16 ounces Frozen Hash Brown Potatoes (or you can use fresh potatoes of your choice, peeled and diced)
- 1 tablespoon smoked paprika
- 1 teaspoon cumin
- Salt and Black Pepper, to taste
- Drizzling of Good Olive Oil
- Optional: Freshly grated cheese for garnishing
Directions
- Pre heat Oven 425 F
- In a 10" cast iron skillet add potatoes, seasoning, olive oil, cover with aluminum foil and place into the hot oven and bake 20 minutes, remove from oven, make wells with a large spoon and crack an egg in each well, return to oven and bake 6 minutes longer (until eggs set up and cook to your liking).
- Plate and serve.
