  • Scotch Eggs

    Another good party App, everyone enjoys them, cut them in half and serve with mustard of choice.

    Ingredients

    • 2 pounds of medium ground pork
    • 2 cups of white breadcrumbs
    • 1 tsp Sage
    • 1 Tsp Mace
    • Touch of cayenne T.T.
    • 1 dozen large eggs
    • 1 egg [for egg wash]

    Directions

    1. Mix first five ingredients together until fully incorporated, form into ball and refrigerate.
    2. Hard-Boil the eggs and allow to cool, then shell.
    3. Take a small quantity of the meat and form a small circle in your hand, place an egg into it and form meat around it until it is seam free, normally about 1/4 inch thick.
    4. Mix remaining egg in bowl and place breadcrumbs in similar bowl, coat eggs with egg wash and roll in breadcrumbs.
    5. Place all of the eggs on baking tray and place in pre-heated oven [300 deg] for about 15 min, turning frequently to avoid burning on the bottom.
    6. Pre-heat deep fat fryer to 350 deg and lower 3 eggs at a time into oil and fry until golden brown all over, rolling them frequently, remove and drain on paper towel then refrigerate until needed.
