Sauteed Apples And Sweet Potatoes
Ingredients
- 4 lg. apples, peeled, cored and sliced
- 2 sticks butter
- 1 c. brown sugar
- 1 tbsp. orange juice
- 2 level tbsp. cinnamon
- 2 lg. cans sweet potatoes or possibly yams (not candied)
Directions
- In a large fry pan or possibly Dutch oven, heat one stick of butter. Add in apple slices and cook over low heat, stirring frequently. Cook till apples are tender-crisp (5-10 min). Add in sweet potato chunks and mix well. Heat through. Remove to covered casserole and keep hot, placing a towel over casserole while you make syrup.
- In same fry pan, heat one stick of butter; add in cinnamon. Mix well. Add in brown sugar and orange juice; mix well. Return apple-sweet potatoes to pan and heat till piping warm, stirring constantly. Serve piping warm. (A simple delicious side dish, with less than 10 min cooking time on low heat.)
