Sausage and Pinto Bean Cornbread Casserole
This is a recipe my father and I created, which was inspired by Southern Living's Chicken and Black Bean Casserole.This casserole is SO delicious-- and hard to mess up! Ingredients
- 2 lb. ground sausage (I recommend one mild and one spicy)
- 1/2 c. chopped onion
- 1/2 c. chopped green bell pepper
- 2 16-oz. cans of pinto beans
- 1 can diced tomatoes
- 1/2 tsp. salt
- 8 oz. shredded mexican cheese
- 1 box cornbread mix (and the necessary ingredients for that)
Directions
- 1. Preheat 425 degrees
- 2. Brown sausage on skillet, medium, about 7 min.
- 3. Add onion and peppers to skillet, cook another 3 min.
- 4. Drain skillet
- 5. Stir into skillet beans, tomatoes, and salt
- 6. Pour skillet into greased 13x9 dish
- 7. Sprinkle all cheese
- 8. Spoon cornbread mix over dish
- 9. Bake for 20 minutes and serve hot
