Sausage and Pinto Bean Cornbread Casserole

This is a recipe my father and I created, which was inspired by Southern Living's Chicken and Black Bean Casserole.This casserole is SO delicious-- and hard to mess up!

Ingredients

  • 2 lb. ground sausage (I recommend one mild and one spicy)
  • 1/2 c. chopped onion
  • 1/2 c. chopped green bell pepper
  • 2 16-oz. cans of pinto beans
  • 1 can diced tomatoes
  • 1/2 tsp. salt
  • 8 oz. shredded mexican cheese
  • 1 box cornbread mix (and the necessary ingredients for that)

Directions

  1. Preheat 425 degrees
  2. Brown sausage on skillet, medium, about 7 min.
  3. Add onion and peppers to skillet, cook another 3 min.
  4. Drain skillet
  5. Stir into skillet beans, tomatoes, and salt
  6. Pour skillet into greased 13x9 dish
  7. Sprinkle all cheese
  8. Spoon cornbread mix over dish
  9. Bake for 20 minutes and serve hot
