    Sauerkraut and Sausage Casserole

    I found this in the Lititz Church of the Brethren Cookbook credited to Helen Forry. I love sauerkraut and this just looks too good. It is on my list to try.

    Ingredients

    • 1-1/2 lb Pork Sausage
    • 1 can Sauerkraut
    • 1/4 cup Onion, chopped
    • 3 cups Mashed Potatoes (Instant works fine)
    • 1/4 cup grated Cheese

    Directions

    1. Brown sausage in pan and drain.
    2. Combine Sauerkraut and Onion.
    3. Place in bottom of casserole and cover with Sausage.
    4. Stir half of cheese Cheese into Mashed Potatoes and cover Sausage.
    5. Sprinkle remaining cheese on top.
    6. Bake at 400 for 35-40 minutes or until the tips of the potatoes turn golden brown.

      I finally got to try this today and it is fantastic. I am considering changing the name to Hirte Pie as it is much like a German version of Shepherd's Pie. If I can figure out how to do it I am going to tweak the recipe and make it 1/4 cup each of cheese and onions. Otherwise this is great for anyone who appreciates German food.

        Thank you for the great recipe!!! I am not a sauerkraut fan, but browned it with the onion in some coconut oil - it was DELICIOUS! I am not a great cook, but hubby was impressed with tonight's meal.
