* Variation of a Velouté sauce Ingredients
- 1 ½ c of velouté
- ½ c whipping cream
- Kosher salt
- Pepper
- Lemon juice
Directions
- Bring the sauce to a simmer. Beat in the cream by spoonfuls, simmering, until the sauce is the desired consistency. Season to taste with the salt, pepper, and drops of lemon juice.
