RoseMary Shrimp Skewers with Lemon Garlic Pesto makes a great Appetizer ,light and Delicious and will tickle your taste buds .. Ingredients
- Lemon Garlic Pesto
- 1/2 cup pine nuts
- 1 garlic clove minced
- 1 lemon juiced and zest
- 1/2 cup olive oil
- Shrimp Skewers
- 1lb Shrimp--16--20 count peeled
- 1/8 cup olive oil
- 1`/4 tsp red pepper flakes 1tbs fresh thyme chopped
- RoseMary leaves bottom leaves removed
Directions
- Pesto==Pulse all pesto ingredients until they form a paste ,remove from food processor and set aside
- Shrimp Skewers
- Place Shrimp in a single layer on a baking sheet
- In a small mixing bowlwhisk together olive oil and pepper flakes
- and thyme ,pour over shrimp and set aside 30 minutes
- When ready to cook broil shrimp in a single layer for 8-12 minutes
- remove from oven and skewer Shrimp with RoseMary sprigs
- Arrange Shrimp on a serving plate and serve with LEmon Garlic Pesto for a dipping sauce ..
