  • Roasted Aloo Jeera

    I had this potato side dish in a restaurant and loved its simple flavours and tried re-creating it using my own imagination and it turned out to be good as well.

    Ingredients

    • 2 large potatoes or 500g of baby potatoes - cubed if whole potatoes and halved for baby potatoes
    • 1 heaped tsp cumin seeds
    • Curry leaves
    • About 1 cup of coriander leaves - chopped
    • 1/2 tomato - cubed
    • 1/2 tsp turmeric powder
    • 1/2 tsp cumin powder
    • 1 tsp ginger and garlic paste
    • Salt to taste

    Directions

    1. Heat oil in wok and saute the cumin seeds, curry leaves, ginger and garlic paste and some of the coriander leaves.
    2. Then add the potatoes, salt, spices and add enough oil to cook the potatoes. Cover to let it cook through.
    3. When the potatoes appear to be cooked halfway and brown, add in the tomatoes and coriander leaves and let the potatoes to roast till done.
    4. Turn off stove and garnish with some coriander leaves and serve warm.
