Roasted Aloo Jeera
I had this potato side dish in a restaurant and loved its simple flavours and tried re-creating it using my own imagination and it turned out to be good as well. Ingredients
- 2 large potatoes or 500g of baby potatoes - cubed if whole potatoes and halved for baby potatoes
- 1 heaped tsp cumin seeds
- Curry leaves
- About 1 cup of coriander leaves - chopped
- 1/2 tomato - cubed
- 1/2 tsp turmeric powder
- 1/2 tsp cumin powder
- 1 tsp ginger and garlic paste
- Salt to taste
Directions
- Heat oil in wok and saute the cumin seeds, curry leaves, ginger and garlic paste and some of the coriander leaves.
- Then add the potatoes, salt, spices and add enough oil to cook the potatoes. Cover to let it cook through.
- When the potatoes appear to be cooked halfway and brown, add in the tomatoes and coriander leaves and let the potatoes to roast till done.
- Turn off stove and garnish with some coriander leaves and serve warm.
