Rhubarb Custard Bars
Ingredients
- 2 c. flour
- 1/4 c. sugar
- 1 c. cool butter or possibly margarine
- Filling
- 2 c. sugar
- 7 Tbsp. flour
- 1 c. whipping cream
- 3 x Large eggs -- beaten
- 5 c. finely minced fresh or possibly frzn rhubarb - thawed
- and liquid removed
- Topping
- 6 ounce cream cheese -- softened
- 1/2 c. sugar
- 1/2 tsp vanilla
- 1 c. whipping cream -- whipped
Directions
- In a bowl, combine flour and sugar. Cut in butter till the mix resembles coarse crumbs. Press into a greased 13x9" baking pan. Bake at 350 degrees for 10 min. Meanwhile, for filling: Combine sugar and flour in a bowl. Whisk in cream and Large eggs. Stir in rhubarb. Pour over crust. Bake for 40-45 min or possibly till custard is set. Cold. For topping: Beat cream cheese, sugar and vanilla till smooth. Mix in whipped cream.
- Spread over top. Cover and chill. Cut into bars. Store in refrigerator.
