  • Rhubarb Custard Bars

    Ingredients

    • 2 c. flour
    • 1/4 c. sugar
    • 1 c. cool butter or possibly margarine
    •     Filling
    • 2 c. sugar
    • 7 Tbsp. flour
    • 1 c. whipping cream
    • 3 x Large eggs -- beaten
    • 5 c. finely minced fresh or possibly frzn rhubarb - thawed
    •     and liquid removed
    •     Topping
    • 6 ounce cream cheese -- softened
    • 1/2 c. sugar
    • 1/2 tsp vanilla
    • 1 c. whipping cream -- whipped

    Directions

    1. In a bowl, combine flour and sugar. Cut in butter till the mix resembles coarse crumbs. Press into a greased 13x9" baking pan. Bake at 350 degrees for 10 min. Meanwhile, for filling: Combine sugar and flour in a bowl. Whisk in cream and Large eggs. Stir in rhubarb. Pour over crust. Bake for 40-45 min or possibly till custard is set. Cold. For topping: Beat cream cheese, sugar and vanilla till smooth. Mix in whipped cream.
    2. Spread over top. Cover and chill. Cut into bars. Store in refrigerator.
