Reduced Fat Pumpkin Cookies
Ingredients
- 1 cup vegetable spread butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 3/4 cup canned pumpkin
- 1 egg
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1 tablespoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 2 cups all-purpose flour
Directions
- Cream together butter and two sugars. Add the pumpkin and vanilla. Mix thoroughly. Sift together flour, baking soda, cinnamon, nutmeg, and allspice. Add to pumpkin mixture. Drop tablespoons of dough onto greased cookie sheet. Bake 8-10 minutes at 350. Makes 36 cookies.
