    Ingredients

    • Cookie Cups
    • 1 roll (16.5 oz) Pillsbury® refrigerated sugar cookie dough
    • 1/3 cup all-purpose flour
    • Red Velvet Cheesecake Filling
    • 1/2 heavy whipping cream
    • 8 oz cream cheese, softened
    • 1/3 cup sugar
    • 1/2 tsp vanilla extract
    • 1 cup red velvet cake mix
    • red food coloring (optional)

    These Red Velvet Cheesecake Cookie Cups take just minutes to prepare and are so fabulously festive! Sugar cookie cups are filled with a creamy no-bake red velvet cheesecake filling!

    Every day after school I am bombarded with requests for play dates. If Reece and Bryce had their way, I’d be running a daily after school fun clinic. We finally had an opportunity to have some friends over after school this past week and boy oh boy did we make the most of it!

    Since Valentine’s Day is next week I had no problem going a little overboard in the fun department. I got the table all set up and ready to go while the kids were at school (minimum days all week!). I had quite the menu planned and the best part is the kids got to help!

    We started with some Valentine Cookie Pops. I set out all kinds of goodies to decorate the cookie pops with and I was amazed and astonished time and again with what these kids came up with! Little smarties :)

    The boys were interested for about 2 minutes then went outside to play. They came back in 10 minutes later where they willingly taste-tested the girl’s creations. Sounds a lot like their daddy.

    I will give Bryce props in that after the table cleared out a bit he really got into it and made some super special cookie pops for his mommy :) My sweetie!

    After all those cookie pops it was absolutely time for some dessert (haha!) and these Sweetheart Cinnamon Rolls totally hit the spot. I was amazed at how much sugar these kids could put away and then I realized how they did it. See, they would make a cookie, eat a cookie, run outside and play like crazy for 10 minutes, come back inside and start all over.

    Us moms weren’t doing all that hard-core playing in between sweets so we knew we had to pace ourselves. Fortunately, we saved room for the best treat of the entire party, my Red Velvet Cheesecake Cookie Cups.

    I baked up the cookie cups during the party and let them cool. Next I made up the no-bake red velvet cheesecake filling and had that chilling in the fridge. When the kids had settled down (and by that I mean there was slightly less screaming and running) I took a few minutes to fill the cookie cups. Easy peasy and oh-so pretty!

    I had totally thought these would be the more “grown-up” treats at the party but low and behold the kids were clamoring for these babies as well! Everyone had so much fun and we are all totally ready now for Valentine’s Day!

    Red Velvet Cheesecake Cookie Cups

    These Red Velvet Cheesecake Cookie Cups take just minutes to prepare and are so fabulously festive! Sugar cookie cups are filled with a creamy no-bake red velvet cheesecake filling!

    Cookie Cups

    Preheat oven to 350°F.

    Coat a mini muffin tin with nonstick cooking spray.

    In a large bowl, combine cookie dough and all purpose flour. Knead together until well blended.

    Shape dough into one inch balls. Press cookie dough in bottom and up the sides of each muffin cup, forming cup shape.

    Bake 10 to 12 minutes or until edges are just starting to turn golden brown.

    Remove from oven and let cool for at least ten minutes before gently twisting to remove from pan. Place on rack and let cool completely.

    Red Velvet Cheesecake Filling

    Whip heavy whipping cream until stiff peaks form. Set aside.

    Beat cream cheese in a large mixing bowl until soft and fluffy.

    Beat in sugar and vanilla extract until well combined.

    Gradually beat in cake mix. If you want a deeper red, beat in red food coloring until desired color is achieved.

    Chill cheesecake filling for one hour before piping into cookie cups.

    Keep refrigerated until ready to serve.
