  • Red Bell Pepper and Mozzarella Frittata

    One of my newest favorite dishes is the frittata. Its simple, fluffy texture, the layers of flavor, the savory, hearty wedges are a perfect make-ahead for a brunch,an ideal meal for Lent, or just a easy, breezy dinner to entertain with. Paired with some fresh, plump strawberries, cold orange juice, lightly toasted English muffins - this is a great meal any time of the day.

    Ingredients

    • 2 large red bell peppers
    • 1/2 C. mozzarella, crumbled or shredded
    • 5 whole eggs
    • 5 egg whites
    • 1/2 tsp. salt
    • 1/4 tsp. pepper
    • 1/8 C. light sour cream
    • 4 T. skim milk
    • 1 tsp. canola oil

    Directions

    1. Use oil to grease a 9" pie plate.
    2. Whisk whole eggs, egg whites, sour cream, milk, salt, and pepper.
    3. Finely chop red bell peppers.
    4. Pour egg mixture into pie plate.
    5. Add cheese and pepper.
    6. Bake at 325 for 35 minutes.
    7. Frittata is done when golden brown on top and egg is just cooked through.
    8. Cut into wedges
