Red Bell Pepper and Mozzarella Frittata
One of my newest favorite dishes is the frittata. Its simple, fluffy texture, the layers of flavor, the savory, hearty wedges are a perfect make-ahead for a brunch,an ideal meal for Lent, or just a easy, breezy dinner to entertain with. Paired with some fresh, plump strawberries, cold orange juice, lightly toasted English muffins - this is a great meal any time of the day. Ingredients
- 2 large red bell peppers
- 1/2 C. mozzarella, crumbled or shredded
- 5 whole eggs
- 5 egg whites
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/8 C. light sour cream
- 4 T. skim milk
- 1 tsp. canola oil
Directions
- Use oil to grease a 9" pie plate.
- Whisk whole eggs, egg whites, sour cream, milk, salt, and pepper.
- Finely chop red bell peppers.
- Pour egg mixture into pie plate.
- Add cheese and pepper.
- Bake at 325 for 35 minutes.
- Frittata is done when golden brown on top and egg is just cooked through.
- Cut into wedges
