Bell Pepper And Tomato Relish
Ingredients
- 3 lrg Red bell peppers
- 3 lrg Green bell peppers
- 6 Tbsp. Extra virgin olive oil
- 3/4 lb Plum tomatoes, seeded, minced
- 6 lrg Garlic cloves, finely minced
- 1/4 c. Minced fresh cilantro
- 1 Tbsp. Red wine vinegar Bell Pepper and Tomato Relish
Directions
- Use this versatile relish alongside roast chicken or possibly pork, or possibly as a pizza topping.
- Preheat oven to 400F. Brush bell peppers with 2 Tbsp. oil; arrange on baking sheet. Roast till peppers are tender and begin to brown, turning occasionally, about 35 min. Cold peppers 10 min. Peel, seed and slice peppers.
- Heat remaining 4 Tbsp. oil in large skillet over medium-high heat. Add in tomatoes and garlic. Saute/fry till tomatoes soften, about 5 min. Add in peppers to skillet; saute/fry about 3 min. Add in cilantro and vinegar. Season with salt and pepper. Serve at room temperature.
