  • Bell Pepper And Tomato Relish

    Ingredients

    • 3 lrg Red bell peppers
    • 3 lrg Green bell peppers
    • 6 Tbsp. Extra virgin olive oil
    • 3/4 lb Plum tomatoes, seeded, minced
    • 6 lrg Garlic cloves, finely minced
    • 1/4 c. Minced fresh cilantro
    • 1 Tbsp. Red wine vinegar Bell Pepper and Tomato Relish

    Directions

    1. Use this versatile relish alongside roast chicken or possibly pork, or possibly as a pizza topping.
    2. Preheat oven to 400F. Brush bell peppers with 2 Tbsp. oil; arrange on baking sheet. Roast till peppers are tender and begin to brown, turning occasionally, about 35 min. Cold peppers 10 min. Peel, seed and slice peppers.
    3. Heat remaining 4 Tbsp. oil in large skillet over medium-high heat. Add in tomatoes and garlic. Saute/fry till tomatoes soften, about 5 min. Add in peppers to skillet; saute/fry about 3 min. Add in cilantro and vinegar. Season with salt and pepper. Serve at room temperature.
