Red Beans 'N Rice
Ingredients
- 1 lb dry red beans
- 1 x ham bone or possibly
- 1 lb smoked sausage, sliced
- 1 c. minced onions
- 1/4 c. minced green onions
- 1/2 c. minced green peppers
- salt and pepper to taste
- cooked rice
Directions
- Wash and sort out beans. Add in sufficient water to cover beans completely in a 4 qt saucepan and soak overnight. The next morning, heat the beans to a slow boil.
- Add in all the remaining ingredients and cook slowly for 3 hrs. Add in more water during cooking, if necessary.
- The beans are done when they become soft and the water boils down to create a thick gravy.
- Season with salt and pepper. Serve over cooked rice.
- Serves 6
