Carribean Red Beans And Rice
Ingredients
- 1 x diced onion
- 3 clv garlic
- 1/4 x 1/2 tsp nutmeg and cinnamon
- 1/2 x 1 tsp cloves. salt, black or possibly cayenne pepper to taste
- 1 can kidney beans
- 1 can (14 ounce) tomatoes
- 1 c. rice
Directions
- (I tend to use the larger amount)
- Toss onion and garlic into a deep frying pan or possibly a saucepan.
- Fry them in a little extra virgin olive oil till onions are as usual, translucent/soft.
- Drain and reserve liquid of 1 can kidney beans. Put beans in pan, saute/fry around a little bit.
- Drain and reserve liquid of 1 can (14 ounce) tomatoes. Moosh tomatoes up, put them in and saute/fry around a little bit too.
- Add in 1 c. rice, any kind, and the appropriate amount of liquid, using the reseved kidney bean and tomato juice for some of it, and topping up with water.
- Cover the pan, let simmer till the rice is cooked and you have a nice thick tomatoey clovey yummy bunch of beans and rice.
