Ingredients

  • 1 lb dry red beans
  • 1 x ham bone or possibly
  • 1 lb smoked sausage, sliced
  • 1 c. minced onions
  • 1/4 c. minced green onions
  • 1/2 c. minced green peppers
  •     salt and pepper to taste
  •     cooked rice

Directions

  1. Wash and sort out beans. Add in sufficient water to cover beans completely in a 4 qt saucepan and soak overnight. The next morning, heat the beans to a slow boil.
  2. Add in all the remaining ingredients and cook slowly for 3 hrs. Add in more water during cooking, if necessary.
  3. The beans are done when they become soft and the water boils down to create a thick gravy.
  4. Season with salt and pepper. Serve over cooked rice.
  5. Serves 6
