    • 1 cup red beans, boiled
    • 2 onions, chopped
    • 1 tomato, chopped
    • 2 green peppers, chopped
    • ¼ cup chopped parsley
    • A handful of strawberries, sliced
    • ¼ cup feta, crumbled
    • Salt to taste
    • ½ tsp sumac
    • 1 lemon, squeezed
    • 2 tbsp extra virgin olive oil

    Red bean salad is no way a simple side dish! You can definitely eat it as your main dish at lunch or dinner.Sometimes we don’t feel like eating hot or warm dishes, especially when it’s intolerably hot outside. We need more refreshing foods on such boiling days! This red bean salad absolutely meets our needs!

    When a food is refreshing, it doesn’t have to lack nutrition, right? Beans are so healthful since they are a good source of protein and fiber. We have a great salad called Piyaz in Turkish cuisine and it’s made with white beans. I make it often as a side dish, but since I learnt that red beans are a lot richer in protein, I’ve created new combinations with it. I’m trying to have it as often as the white one.

    My favorite way of using them is making a refreshing salad. Red bean salad can be served both as a side dish and main dish depending on the season and the amount of red beans in it. I use fewer beans in salad in winter to complement a main dish with meat or chicken while a salad with generous amount of red beans is definitely enough to fill your stomach in summer. You don’t need anything else!

    What ingredients to use in salad besides red beans is up to your taste, but I can’t think of a bean salad without onion! Red onion would be my personal choice. Other ingredients to combine are limitless! You can add lettuce or spinach leaves, herbs or roasted vegetables. You can even add some fruit in it! Another staple ingredient in a red bean salad for me is feta. The sourish flavor of cheese goes very well with beans.

    What do you think is the best way to have fun when having a bean salad? Eating them on tortillas! I make small whole wheat tortillas to serve them with this refreshing bean salad and these two have become one of our favorite summer meals for us! You must try this super yummy, refreshing and healthful salad and I’m sure your family will love it!

    Red Bean Salad

    Ingredients

    Instructions

    Combine beans, onions, tomato, peppers and parsley in a bowl.

    Mix salt, sumac, lemon juice and olive oil and pour into the bowl.

    Mix with a spoon.

    Top salad with feta and strawberries.

    Serve cold.
