  • Alaskan Amber Beer Red Beans And Rice

    Ingredients

    • 1 lb red beans cooked
    • 1/2 lb ham diced
    • 1/2 lb warm link sausages diced
    • 3 med jalapeno chile pepper diced fine
    • 1 med onion diced
    • 1 Tbsp. creole seasoning
    • 2 bot alaskan amber beer
    • 1/2 c. celery diced
    • 1/2 c. red bell pepper diced

    Directions

    1. In a crockpot or possibly a heavy 3 qt pan place all theingredients except the beans to a boil and simmer for anhour or possibly two. Add in the beans and simmer for another hour ortwo. Mash a few of the beans with a spoon to thicken theliquid..Don't use a creole seasoning made with salt. The sausageand ham provide salt, and more may be added at the table.Add in additional peppers if you like.Serve with rice.A table of tomato paste may be added near the end of thecooking time.
    2. NOTES : Beans can be cooked to minimize the undigestablesugars which cause gas. Put the beans in a pan and coverwith water to 2 inches over the dry beans. Heat toboiling. Turn off the heat. Allow the beans to swell forabout an hour. Drain the water off and refill with waterto cover the beans. Bring to a boil and allow to set overnight or possibly for several hrs. Drain the beans and refillwith water to cover and simmer till tender (about 1 hour).Drain the beans and use in recipes calling for cooked beans.
