    Oven-roasted Shrimp

    I am having trouble getting back in the swing of things in the kitchen after our Charleston vacation. Friday night a few friends got together for an impromptu gathering for drinks and small plates (appetizers). Looking at the frig and freezer to see what I could put together that would be really good but fairly simple I came upon a pound of shrimp and decided on the oven-roasted shrimp. These require very little work and always come out just great.

    I bundled the shrimp with some Mu Shu Pork rollups, ham with pepper jam on bisquits, goat cheese stuffed mushrooms and leftover steak in teriyaki sauce. We finished with crepes with fresh berries. it didn’t seem like much when I was making it but I guess I am officially over my post-vacation food slump.

    Place the shrimp, olive oil, chopped garlic and salt and pepper in a large plastic bag. Shake the bag and let stand for 20 minutes. Preheat oven to 400 degrees. Place contents of bag on a jellyroll pan (cookie sheet with a lip) and cook in oven for 10 minutes or until lightly browned.
