  • Quinoa Granola

    Quinoa Granola

    A healthy (depending what you mix in), protein packed snack or breakfast.

    Ingredients

    • 1 c water
    • 1/2 c quinoa
    • 1 T brown sugar
    • 1 tsp cinnamon
    • 1/4 tsp nutmeg
    • 2 c rolled oats
    • 1 tsp vanilla
    • 1 tsp cinnamon
    • 1 T maple syrup
    • 1 T agave syrup (You could also sub honey for the maple and agave)
    • 1 tsp salt
    • 1/4 c canola oil
    • Mix-ins! This where you can go crazy and add whatever you want! I used:
    • 1 c dried cranberries
    • 3/4 c dried pineapple cubes
    • 1 c mixed nuts, chopped

    Directions

    1. Bring the quinoa, water, first measure of cinnamon, brown sugar and nutmeg to a boil.
    2. Cook until the quinoa is tender, about 15 minutes.
    3. Cool to room temp.
    4. While the quinoa is cooking, toast the nuts you intend to use unless they are already roasted; most nuts toast at 350 for about 10 minutes.
    5. Combine the cool quinoa, oats and remaining ingredients, except for the mix-ins, together in a bowl.
    6. Spread the quinoa and oats into a single layer on a baking sheet.
    7. Bake for 40 minutes at 350, stirring every 10 minutes until the mix is crunchy and golden brown.
    8. When the mixture is tone and has cooled slightly, stir in your mix-ins.
    9. Enjoy!!
