    Pumpkin Spice Scones

    If you love the pumpkin scones at Starbucks, then you are in LUCK because these scones are waaay more delish and moist! They are also suprisingly easy to make as well.

    Ingredients

    • 1 c all purpose flour
    • 1 c cake flour
    • 1 1/2 tsp baking power
    • 1/2 tsp salt
    • 1/2 tsp ground cinnamon
    • 1/2 tsp ground nutmeg
    • 1/4 tsp allspice
    • 1/4 tsp ginger
    • 6 T. unsalted butter
    • 1/2 c raisins (optional)
    • 1/3 c pumpkin puree
    • 1/3 c heavy cream
    • 6 T. brown sugar
    • 1 t vanilla
    • icing:
    • 1 c powder sugar
    • 2 T milk
    • 1/2 tsp cinnamon

    Directions

    1. preheat oven to 425. get out a baking sheet and line with parchment paper
    2. cut the butter into small pieces, put it in a small bowl back in the fridge
    3. in a medium bowl, combine both flours, baking powder, salt and all spices. which together well and place bowl in freezer
    4. in a separate bowl, combine pumpkin, heavy cream, brown sugar and vanilla. whisk together well and put in freezer
    5. take out other bowl from freezer (with flour)
    6. dump the butter pieces into the bowl with teh flour mixture. Cut the butter into the flour using a pastry blender or rub it in with your fingertips until it resembles coarse crumbs
    7. stir in raisins if using them
    8. get the liquid mixture out of the freezer and pour into flour mixture all at once.
    9. stir with a wooden spoon until just moistened. The dough will be crumbly, this is as it should be.
    10. turn the mixture out onto the counter and push the pile together with your hands. it should stick together fairly well.
    11. knead it just a cuple of times until everything is together. don't knead too much or it will get too sticky
    12. pat the dough into a rough circle approx 3/4" to 1" and cut the dough like a pie into 8 pieces. plae pieces on baking sheet so they are NOT touching
    13. bake scones for about 15 minutes. They should be light brown on bottom, the tops will darken as they cool
    14. let scones cool then ice them with cinnamon icing
    15. combine the icing ingriedients and then either dunk the tops in glaze (as I do) or you can drizzle or spoon on.
