Pumpkin Cream Cheese Muffins
Ingredients
- Filling:
- 1 (8oz.) pkg. cream cheese, softened
- 1 tsp vanilla extract
- 1 egg
- 3 TBSP brown sugar
- Streusel Topping:
- 1/4 cup + 1 1/2 tsp flour
- 1/4 cup + 1 TBSP sugar
- 3/4 tsp cinnamon
- 3 TBSP butter, softened
- Batter:
- 2 1/2 cups flour
- 2 cups sugar
- 2 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp salt
- 2 eggs
- 1 1/3 cups canned pumpkins
- 1/3 cup olive oil
- 2 tsp vanilla extract
Directions
- Filling:
- Beat cream cheese until soft.
- Add vanilla extract, egg and brown sugar.
- Beat until smooth.
- Set aside.
- Streusel Topping:
- Mix flour, sugar and cinnamon.
- Add soft butter.
- Cut in until crumbly.
- Set aside.
- Preheat oven to 375 degrees
- Batter:
- In a large bowl, sift together flour, sugar, baking powder, cinnamon and salt.
- Add eggs, pumpkin, olive oil and vanilla extract.
- Beat until smooth.
- Fill muffin baking cups 1/2 full in muffin pans
- Carefully add 1 TBSP cream cheese mixture right in the middle of the batter.
- Sprinkle streusel topping over the batter.
- Bake at 375 degrees for 25-30 minutes
