  • Potato Leek Soup

    Delicious, thick soup--perfect comfort food!

    Ingredients

    • 2 Tablespoons butter or margarine
    • 1 large chopped onion
    • 2-3 chopped leeks
    • 2 Tablespoons flour
    • 4 cups water, vegetable or chicken stock
    • 3 medium peeled, chopped potatoes (or could use 6-8 small white unpeeled, chopped potatoes)
    • salt and pepper to taste
    • 1 cup milk (can use low fat, fat free or even lactose-free)

    Directions

    1. Over medium heat, melt butter in soup pot.
    2. Add onions and leeks.
    3. Saute gently until soft.
    4. Stir in flour and cook for 2 minutes.
    5. Gradually stir in stock.
    6. Add potatoes.
    7. Bring to boil.
    8. Simmer gently 30-40 minutes.
    9. Stir in milk.
    10. Puree soup in blender.
    11. Add salt and pepper to taste.
