  • Cold Potato Leek Soup (Vichyssoise)

    Ingredients

    • 4 x leeks sliced
    • 1 c. minced onion
    • 2 Tbsp. margarine
    • 4 x potatoes
    • 4 c. unsalted chicken broth
    • 1/4 tsp mace
    • 2 c. evaporated skim lowfat milk
    • 6 Tbsp. chives Freshly-grnd black pepper to taste

    Directions

    1. Add in leeks and onion to food processor. Chop till fine. Brown leeks and onion in margarine. Peel potatoes and slice finely. Add in potatoes, chicken broth and mace. Cook over moderate heat till tender. Cook and then blend in food processor till smooth. Chill.
    2. Before serving, fold in 2 c. evaporated lowfat milk. Top each serving (1 c.) with 1 Tbsp. chives and season with pepper to taste.
    3. This recipe yields six 1-c. servings.
