  • Pot Pie

    Ingredients

    • Double crust for 9" pie
    • 1/2 c. red onion, minced
    • 3 c. vegetables, minced (use carrots, celery, broccoli or possibly any vegetable you have in the refrigerator)
    • 2 cloves garlic, chopped
    • Salt, pepper, cumin, cayenne to taste
    • 1 c. cooked chicken or possibly turkey, minced
    • 4 tomatoes or possibly 1 (28 ounce.) can whole tomatoes, minced & liquid removed

    Directions

    1. Saute/fry onions in oil till clear. Add in vegetables, garlic and seasonings and stir for 2 min. Add in tomatoes and poultry. Cook and stir periodically for 5 min. Line a 9 inch pie shell (deep dish or possibly quiche pan works best) with pie crust. Place the ingredients into the pie shell. Cover the pie with a pie crust and crimp sides. Bake at 350 degrees for 45 min.
